Heritage Hospitality Consulting is headed up by Rosemary Spenke. Rosemary has spent her entire career in hospitality, and now provides consulting, professional support and hands on practical help to independent hospitality owners, who for whatever reason, are needing external support for periods of time to drive change and improvements in their businesses.
As a bit of background, Rosemary grew up immersed in the world of hospitality. With both parents working as chefs who later established two small, luxury red-star Scottish country house hotels, a career in hotels felt like a natural path. After earning a degree in Hotel and Tourism Management, she gained invaluable experience working in renowned five-star hotels and restaurants across France (where she met her German husband—hence the surname!) and the UK. Her career included roles with InterContinental Hotels, The Savoy Group, Conran Restaurants, and Malmaison Hotels.
Eventually, Rosemary returned to Scotland to join the family business, Balbirnie House Hotel in Fife. There, she played a key role in developing it into an award-winning, four-red-star country house hotel, proudly part of Small Luxury Hotels of the World.
In recent years, Rosemary has expanded her expertise by working on a wide range of projects throughout the UK, from hotels and exclusive-use venues to private estates. Among her achievements, she was instrumental in establishing Kinross House Estate as Scotland’s most luxurious exclusive-use destination. This experience, combined with her extensive hotel-sector background, inspired her to identify a gap in the market: a need for practical, independent hospitality consultancy.
In early 2020, she founded Heritage Hospitality Consulting, a service dedicated to helping independent owners grow and refine their businesses. Today, the consultancy continues to work with a diverse portfolio of clients, supporting them in taking their hospitality ventures to the next level.
